Summer Is A Time For Salads!

Wouldn’t you agree?

When it’s really hot outside I find myself not wanting to cook hot meals but most of all not wanting to EAT hot meals. All I want are cold drinks and the odd salad or fresh fruit or veggie.

That got me to thinking that you might like some of my favorite salads too…..

One I throw together quite often is this Greek Salad. Super simple and fast.

Greek Salad

3 roma tomatoes, chopped

1 long English cucumber, chopped

1/4 red onion, sliced

1 yellow, orange or red bell pepper, chopped

Kalamata olives, sliced.

Feta cheese

Greek Salad Dressing to taste

I like to slice the onions finely, in manageable sized pieces. I prefer to use yellow, orange or red bell peppers in spite of most Greek Salads calling for green ones. My reasoning is partly because my kids don’t like the green ones but love every other color, and partly because I already have green cucumbers in the salad so I think it’s prettier with either yellow or orange for the added color.

I have made dressing from scratch many times for this salad but honestly I really love the Ken’s Greek Dressing just as much and it’s so quick and convenient. I get mine at Walmart.

Sprinkle in as much or as little of the Kalamata olives as you like. They have such a potent flavor that I find a little goes a long ways.

I prefer to buy blocks of feta cheese and crumble my own. I find it is so much more flavorful than the pre-crumbled.

This recipe serves 4-6 unless you are using it as your entire meal as I often do. In that case it would serve about 2.

Now I’m off to go pick some cucumbers and tomatoes from my garden so I can make one for lunch!
