Creative Thursday: Cinnamon Apple Crumb Cake

Welcome to another Creative Thursday! Emily, Shea and I have been joined this month by several wonderful ladies who have all gathered a delicious dessert recipe for you, perfect for your Thanksgiving table!

I will link everyoneโ€™s recipe at the bottom of this post.

I personally am very fond of pie, especially pumpkin pie, for Thanksgiving dinner. Several of my children really arenโ€™t that crazy about it however, so I often try to have something a little different for those that donโ€™t want the traditional dessert.

Iโ€™ve always been fond of coffee cake for its denseness and the fact that they arenโ€™t normally overly sweet so this particular recipe is a winner for me. I will note that for my large springform cake pan, I double the recipe in order to make it nice and thick.

Crumb Topping

1 1/2 c flour

1/2 c brown sugar

1/4 c sugar

1/2 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

Mix together well. Slowly add:

1/2 c butter, melted

1/2 tsp vanilla

Mix with a fork until itโ€™s all mixed together and crumbly. Set aside.

Apples

3 medium apples

Peel, core and dice into small pieces.

Batter

4 Tbsp butter

1/2 c sugar

Cream together. Then add:

1 egg

1 tsp vanilla

1/2 c sour cream

Mix well.

Combine the following dry ingredients:

1 c flour

1/4 tsp baking soda

1/4 tsp salt

1/2 tsp baking powder

Mix dry ingredients into wet ingredients until just combined.

Method

In a springform cake pan, spread batter on the bottom of the pan.

Place the diced apples over the batter.

Top with the crumb mixture.

Bake at 350 for 35-40 minutes or until it tests done.

After cooling slightly, drizzle with Apple Cider Glaze.

Apple Cider Glaze

1/2 c powdered sugar

2 Tbsp Apple cider
